Nonnie's Cheese Grits


  • 1 cup quick grits (not instant)
  • 1 stick butter or margarine
  • 1/2 lb. Cracker Barrel sharp cheese - grated
  • 3 eggs
  • pinch of red pepper
  • 3 Tbls 1/2 & 1/2 cream

Directions:

Cook grits as directed on box. Fold in butter and cheese until melted. Let cool slightly. Beat eggs well. Add the pinch of red pepper and 1/2 & 1/2 cream to the eggs. Beat until well blended. Fold into grits. Put in greased casserole dish and bake at 300 degrees for 45 min. to 1 hour. Check to see it's not too brown.

Hashbrown Potato Casserole

  • 1 32oz Pkg frozen hash browns (cubed or shredded) - let thaw
  • 1 stick butter-melted
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup onions - finely chopped (or more to liking)
  • 1 cup sour cream
  • 1 8oz. pkg each - medium cheddar and colby - grated
  • 1 can cream of chicken soup
  • 1/2 cup crushed corn flakes for top

Directions:

Mix all ingredients together (reserving 1/2 cup grated cheese) in a 9 x 13 pan. Top with 1/2 cup extra cheese and 1/2 cup crushed corn flakes (or soda crackers). Bake uncovered at 325 degrees for 1-1/4 to 1-1/2 hours. Until cheese is nice and bubbly and top is browned.

Stuffed Mushrooms

  • 20-25 Large Mushroom Caps
  • 1 lb. Bob Evans Sausage-Original
  • 8oz. pkg. cream cheese
  • 1/2 cup parmesan cheese
  • 1/4 cup bread crumbs

Directions:

Wash mushrooms and remove stems. Cook and drain sausage. Mix in cream cheese and parmesan cheese. Stuff mushrooms. Sprinkle bread crumbs over top. Bake at 350 degrees for 30 minutes. Serve immediately. Enjoy!

  • 1 cup of granulated sugar
  • 1/2 cup of butter or margarine
  • 2 eggs (from Harrison Roosters)
  • 1 tsp of vanilla
  • 2 cups of sifted flour
  • 1 tsp of baking soda
  • 2/3 cup of sour milk (from Harrison cows)
  • 1 cup of seedless raisins
  • 1/2 cup of nutmeats
  • rind of one orange - grated

Cream together sugar, butter, & vanilla. Sift flour with dry ingredients. Add, alternately with sour milk, to sugar mixture. Mix Well. Put orange rind, raisins and nuts thru food grinder and fold into mixture. Place in greased tube pan and bake in a 325 degree F. oven for 1 hour. While still hot, pour the juice of an orange mixed with 1/2 cup of sugar over finished cake.

I was forced to make this a couple of years ago, and I found that grinding up the egg shells with a half a cup of chopped rubber bands improved it. Luv, Ray
